2014 Cabernet Sauvignon Paso Robles

This Cabernet Sauvignon has a brilliant dark garnet color saturated to the edge of the meniscus.

The aromas burst forth as juicy, fruity, complex and appealing. Primary and bright dark berry fruits (framboise, cherry, dense blackcurrant) oak-spice, pine forest, and cedar hints.

The flavor profile is medium bodied with excellent depth, richness and length on the finish. Fresh/juicy/primary dark berry fruits from attack through finish. Oak is very well integrated and the wine has an admirable completeness, verve and smoothness rarely tasted at this price point.

This Cabernet Sauvignon would match perfectly with grilled meats or a plate of ripe cheeses and charcuterie. Oak-grilled pork chop, filet mignon to ribeye, don't forget to deglaze the pan with butter, finely chopped shallots and a splash of this wine for an amazing reduction that will pair like a hand to a favorite glove.

No need to age this delicious sipper, but the wine will gain complexity and earthiness over the next 5-8 years in bottle and may surprise those with the rare gift of patience with some amazing layers of sauvage (gaminess) and Paso dust. Challenge: lay a case down and drink it between 5-10 years of age and put it up against wines 2-3x the price and watch this wine impress and surprise your geek friends.
